1Whisk eggs and milk together in a small bowl.
2 Add cooking oil.
3Pour egg mixture into skillet. Add chicken, onions and banana peppers to skillet.
4 Wait till the eggs set at the edges
5 With spatula, gently lift cooked portion to allow uncooked egg to flow underneath.
6Cook until almost set, about 8 minutes.
7Sprinkle cayenne and cheese on half of the omelette.
8Fold other half over cheese. Cut omelette in half and serve with nacho chips and sour cream.
