Spicy Chicken Omelette

3 eggs

1/2 cup (125 mL) milk

1 cooked chicken breast, diced

1/4 cup (50 mL) green onion, chopped

1/4 cup (50 mL) red onion, chopped

to taste hot banana peppers, minced

to taste cayenne pepper

1/4 cup (50 mL) shredded cheese

Whisk eggs and milk together in a small bowl.

Add cooking oil.

Pour egg mixture into skillet. Add chicken, onions and banana peppers to skillet.

Wait till the eggs set at the edges

With spatula, gently lift cooked portion to allow uncooked egg to flow underneath.

Cook until almost set, about 8 minutes.

Sprinkle cayenne and cheese on half of the omelette.

Fold other half over cheese. Cut omelette in half and serve with nacho chips and sour cream.
