Chinese Fried Rice Recipe

 Chicken pieces 350 gram Basmati rIce 2 1½ cups Eggs 2 Yellow food colouring a pinch Spring onion (chopped, green part only) 1 cup Chicken stock 1 cup Soya sauce 2tsp Salt 1tsp Oil 1½ cup + for frying

Par-boil rice and spread on a newspaper Cut chicken into small pieces Boil stock until ¼ cup remains Mix yellow food colouring in egg; beat; fry vigorously and cut finely. Heat 1½ cup oil in a pot; fry chicken till it changes colour Add stock, rice, soya , sauce and salt mix. Add egg and spring onions and put on dum serve hot
